Peaking Waters LLC is a self-funded, sustainably run venture built around one piece of land in Blowing Rock, NC — and one instinct we didn't have to learn, because it was already ours.
Bari on one side. The Veneto on the other. Two families, one instinct — that land is worth farming, water is worth stewarding, and a good glass is worth pouring for someone who shows up. We brought that instinct to a ridge in the Blue Ridge, not the Alps, but the spirit travels.
Peaking Waters exists at the intersection of land, water, and technology. We're not chasing scale for its own sake — we're building ventures that are rooted in place, funded by their own conviction, and meant to still make sense in twenty years. That shapes every decision, not just the mission statement.
We sequence deliberately rather than expand for its own sake — one property, one aquifer, one standard, done properly before anything else is added.
Peaking Waters is built on its own terms and its own timeline, not outside capital's. That's slower. It's also how you keep a promise to the land.
Land, water, and renewables aren't a marketing layer here — they're the fundamentals the rest of the venture is built on top of.
A single property near Blowing Rock, NC, farmed and stewarded directly — not leased out, not subdivided, not rushed toward a faster return.
One well, tested on a regular schedule per North Carolina guidelines, with a full source dossier published to every partner before a bench sample is ever made. See the geology behind it.
We supply the source, the brand, and the demand. Certified co-packing partners supply the bottling capacity. The entire process is published, A to Z — see Co-Pack Partners.
Water, Fraser firs, a pet-friendly outdoor space, and seasonal events are sequenced carefully, one at a time, so nothing competes with getting the fundamentals right first.
Rooted in place, built for the long game — because that's how a mountain, and the people who take one seriously, have always done it.
